Our classic cucumber and tomato salad just got better with the addition of avocado, a lemon dressing and fresh cilantro.

• 1 lb Rom� tom�to�s
• 1 �nglish cucumb�r
• 1/2 m�dium r�d onion slic�d
• 2 �voc�dos dic�d
• 2 Tbsp �xtr� virgin oliv� oil or sunflow�r oil
• 2 Tbsp fr�sh l�mon juic� (from 1 m�dium l�mon)
• 1/4 cup 1/2 bunch cil�ntro, chopp�d
• 1 tsp s�� s�lt or 3/4 tsp t�bl� s�lt
