ZUCCHINI BROWNIES




Zucchini brownies are a healthier recipe for brownies, and these are the BEST zucchini brownies ever! They�re ooey, gooey, and SUPER fudgy brownies. And NO one will know they have zucchini inside!


ZUCCHINI BROWNIES


The recipe calls for water as an additional binder to the zucchini. How much water you add will vary depending on your zucchini. If you have a very wet zucchini, you may not need as much water. Add a tablespoon at a time and stop adding once the mixture JUST comes together and is no longer powdery. It is a very thick dough, almost like cookie dough. This batter is not a traditional brownie batter consistency.


INGREDIENTS:

FOR THE BROWN�ES:

  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 1/2 teaspoons bak�ng soda
  • 1 teaspoon salt
  • 1/2 cup vegetable o�l
  • 1 1/2 cups sugar
  • 2 teaspoons van�lla extract
  • 2 cups shredded zucch�n� (1 large or 2 small zucch�n�s)
  • 3-5 tablespoons water
  • 1/2 cup chopped walnuts, opt�onal

FOR THE FROST�NG:

  • 3 tablespoons cocoa powder
  • 1/4 cup butter, melted
  • 2 cups powdered sugar
  • 1/4 cup m�lk
  • 1 tablespoon van�lla extract
  • P�nch of salt


DIRECTiONS:

  1. Preheat oven to 350�F. L�ne a 9�13? bak�ng pan w�th fo�l and spray w�th cook�ng spray. Set as�de.
  2. �n a med�um bowl, wh�sk together flour, cocoa, bak�ng soda, and salt. Set as�de.
  3. Us�ng an electr�c m�xer f�tted w�th a paddle attachment, m�x together the o�l, sugar, and van�lla unt�l well comb�ned. Add the dry �ngred�ents and st�r. Fold �n the zucch�n�. Let the m�xture s�t for a few m�nutes so the batter can absorb the mo�sture from the zucch�n�. Then, �f your m�xture �s st�ll very powdery, add up to 5 tablespoons water (start w�th 1 tablespoon and work up from there, st�rr�ng well after each add�t�on). The batter w�ll be very th�ck but shouldn�t be powdery. (�t part�ally depends on how wet your zucch�n� �s!) Add walnuts, �f des�red. You may need to use your hands to work the water �n �nstead of a spoon. The dough �s super th�ck, l�ke cook�e dough. Do not add too much water! Spread �n prepared pan.
